François-Xavier Nicolas

François-Xavier Nicolas is a winemaker passionate about his profession. He composes wines highlighting the typicality of his terroir, with the ambition of sharing his beautiful discoveries. For him, the natural richness of the thousand-year-old vine, its environment and human relationships are elements that carry meaning and commitment. These notions are at the basis of his profession and define its foundations. François-Xavier Nicolas is a winemaker determined to convey the beauty and complexity of his work through his exceptional wines.

  • Winemaking

    Crushing and destemming of the harvest. Maceration and alcoholic fermentation in concrete vats for 25 days. Malolactic fermentation done in concrete vats. Aging for 20 months in vats and barrels for 3 to 5 years.

  • Tasting notes

    This red wine has a deep garnet color. On the nose, this wine reveals depth and aromatic richness with notes of morello cherries, blackberries, juniper and undergrowth. On the palate, the attack is dense with fine and concentrated tannins which highlight the notes of black fruits and prune. The finish is long, marked by white pepper.
