Notes de dégustation
This non-dosed Champagne (0 g/L of sugar) and no added sulfur has a very fresh nose with aromas of pear, lemon and hazelnuts. On the palate this champagne is intense and mineral.
Vinification
The Brut Nature sans Sulfur cuvée is made from juices from the first presses using low-pressure plate presses. Malolactic fermentation takes place without filtration or addition of sulfur. The wines are then aged in vats and then bottled. After a short aging in vats, the champagnes are aged on slats for 2 to 3 years without adding any dosage liqueur.
Drappier
L’histoire de la Famille Drappier prend ses racines au XVIIe siècle, à la naissance de Rémy Drappier en 1604 qui devient comme Nicolas Ruinart, marchand drapier à Reims. Il faut attendre 1808 pour que l’un des ancêtres de la maison, François, s’installe à Urville et commence à exploiter un vignoble qui s’étend aujourd’hui sur 90 ha, partagés entre la Côte des Bar, la Montagne de Reims et la Côte des Blancs.
