Notes de dégustation

This red wine has aromas of cherries and plum on the nose as well as fine notes of liquorice and mocha. A beautiful depth in the mouth accompanies a strong character. This wine is also dense and concentrated on its aromas of black fruits.

Vinification

Manual harvest with sorting on the vine. Plot selection. Fermentation after cold pre-fermentation maceration. Pigeage or pumping over following tasting. Natural fermentation without adding yeast. Assembly before barreling. Aging in French oak barrels for 24 months.

En parcourant les vallées verdoyantes et les collines de la région de Limoux, on comprend immédiatement que cette petite région viticole est une exception dans le Languedoc. Au Sud de Carcassonne, sur les contreforts des Pyrénées, Julia et Julien Gil tiennent ici un jeune domaine viticole de 7 hectares : le Plô Roucarels pour "petit plateau rocailleux" en occitan. L’altitude des plateaux ainsi que le climat, plutôt inhabituel pour la région, mêlant influence méditerranéenne et océanique offrent des conditions de croissance extraordinaire aux vignes.
