Notes de dégustation

A nose with aromas of blackcurrant and blackberry. The palate is frank, the tannins are silky and of quality. The balance is perfect between power and harmony.

Vinification

Manual harvest with sorting on the vine. The bunches remain whole during fermentation, with regular pumping over. Natural fermentation without adding yeast. Long maceration after fermentation. Aged in vats for 12 months, bottled without fining or filtration.

En parcourant les vallées verdoyantes et les collines de la région de Limoux, on comprend immédiatement que cette petite région viticole est une exception dans le Languedoc. Au Sud de Carcassonne, sur les contreforts des Pyrénées, Julia et Julien Gil tiennent ici un jeune domaine viticole de 7 hectares : le Plô Roucarels pour "petit plateau rocailleux" en occitan. L’altitude des plateaux ainsi que le climat, plutôt inhabituel pour la région, mêlant influence méditerranéenne et océanique offrent des conditions de croissance extraordinaire aux vignes.
