Notes de dégustation

Blue garnet color. On the nose, notes of sweet red fruits, some chocolate and toasted notes. The palate is structured, with fresh tannins, tangy freshness on the finish highlighting the youth of this wine.

Vinification

Vinification is done in small concrete vats that are not thermoregulated and without adding any inputs. Maceration for 8 to 15 days depending on the vintage to seek harmony in the fruit. Alcoholic and malolactic fermentation in vats. Aged for 6 to 9 months then, after assembly, bottled in the spring following the harvest.

Le domaine des Guyons est un domaine de 19 hectares situé au cœur du sud Saumurois, dans le village du Puy Notre Dame. Les vignes s'étendent sur un terroir composé en majorité de sols argilo-calcaire complantées avec les cépages Chenin, Cabernet Franc et Cabernet Sauvignon. Franck Bimont y élabore des vins expressifs, élégants sans qui reflètent la finesse du terroir.
